About 2,00,000 US troops arrived in India between 1942-45. During the China- Burma-India Theater operations, India provided a base for US troops in support of China. The exact origin story of the Indian American Chop Suey is contested, however, the following is the most legit. This peasant food dish from China began to dominate Chinese American restaurants in the late 1800's. The Indian version of American Chop Suey has no relation to its American counterpart, however anthropologist EN Anderson concludes that chop suey is based on ‘tsap suei' ( which translates to miscellaneous leftovers in Cantonese). The term chop suey was first coined in English in 1888.
